Halloween Gingerbread Biscuits

Makes 18 - 20 biscuits


  • 400g plain flour
  • 140g icing sugar
  • 50g butter 
  • 2 eggs
  • 2 tbsp honey
  • 1 tsp bicarbonate soda
  • 2 tbsp Mixed spice

TOP TIP: best to leave dough in fridge over night for easy rolling.


  1. In a large bowl combine the flour, bicarbonate of soda and spices.
  2. Melt the butter, sugar and honey in a pan over a low heat and stir until sugar dissolves.
  3. Combine together and mix until it forms a stiff dough. Wrap dough in cling film and place in fridge.
  4. Take out of fridge and split dough in 4 pieces. Sprinkle some flour on your table and over rolling pin.
  5. Roll dough out to 3-5mm thigh and then cut with a biscuit cutter. Repeat this process with leftover dough.
  6. Place on baking sheet. When sheet is full place on baking tray and cook for 10-15 mins at 180ºC/gas 4
  7. Leave to cool before decorating.
