Halloween Recipe


Recipe: Gingerbread Spiders, Bats n Cats
(makes around 25 biscuits)
 
 
These biscuits taste awesome and are really fun to make because everything is mixed in one bowl so there's virtually no washing up. Use any shaped cutters or even get creative with a kitchen knife. We raided our nut and seed cupboard to decorate the Bats with Goji Berry Lips, Spiders with Flaxseed Fur and Cats with Pecan Paws.   
 
225g butter, soft
340g soft brown sugar
1 egg, beaten
300g plain flour
1 tsp baking powder
1/2 tsp table salt
1 1/2 tsp ground nutmeg
1 1/2 tsp ground cinnamon
1 1/2 tsp ground ginger
225g icing sugar
1 lemon, juice & zest  
in a large bowl mix the butter and sugar
add the beaten egg
mix in the flour, baking powder, salt and spices
roll into a ball & wrap in cling film, rest in fridge (ideally 1 hr)
 
roll out the mix and cut into shapes
cook at 180 °c for 10-12 minutes (until edges golden)
 
mix icing sugar with zest, and gradually add lemon juice 
(consistency should be similar to that of the mixed sugar and butter)
when biscuits cool, decorate with icing
